Why do covalent bonds:
consist of molecules
why are they insoluble in water but soluble in organic substances
why are they usually gases or liquids @ room temp.
and why don’t they react as quickly as ionic substances?

You do realize that what you have assumed about compounds with covalent bonds consists of a lot of erroneous assumptions.
ALL bonds are covalent, it’s just that the ones we say are “ionic” have some degree of covalent character. There are compounds with covalent bonds that form networks and polymers, not just molecules. Many compounds with covalent bonds dissociate in water to form ions. Some examples are HCl, CuCl2, SnI4 and AlBr3. The last three are solids, of course.
So you see, making unwarranted assumptions can create many misconceptions.
